Lola's birthday fell on a Tuesday, so she got to have a mini party at school to celebrate. I was SO done with baking for awhile because of all the time and energy their cakes took. I had several leftover plain strawberry cupcakes and some buttercream left in the fridge. So I decided to make cupcake bites!
Since I had all the other ingredients, all I had to buy was the peanut butter cup candy mold, which was around $3. (You can ready all about cupcake bites, cupcake pops, and cake balls HERE.)
Here's how to do it:
- melt candy melts ( i used chocolate)
- pour into peanut butter cup mold
- immediately add cakeball to each cup
- place in fridge for 15 min.
- pop out of candy mold
- melt candy melts for top of cupcake bites ( i used lavender)
- turning upside down, dip the top of each cupcake bite into the candy melts. Cover the entire cakeball, all the way to the rim of the peanut butter cup shape.
- place onto wax paper to set. immediately add sprinkles and whatever topping you would like to decorate. The candy will set pretty fast. (I used plain old multicolored sprinkles and the pink hearts from a bag of runts.
